Balance – I’m a firm believer in it. I definitely love to eat healthy but most of the time I have things I’d rather be doing than food prepping, cooking and grocery shopping. I tend to find that I will stick to my tried and true simple favourites because any recipe that uses more than 6 ingredients does not belong in my kitchen on a regular basis.
I find it quite rare to come across clean, healthy recipes that are super simple yet taste awesome – and don’t include something on top of a ryvita. So I thought I would put together 4 recipes for you all that are DELISH and only have THREE INGREDIENTS. Plus they take 5-10 minutes to make… winning!
Before we start, I would just like to point out that I am not a nutritionist (although I will ask our nutritionist Kristy to take a look at this before posting). These are just simple recipes that I really enjoy and I believe anyone could make.
These are AMAZING and soo simple to make. Grab 1 banana and mash it up with 1 egg until well combined. Cook this mixture in a fry pan (I use a little coconut oil in the pan). Once the mixture bubbles at the top and is easy to flip, turn over and cook the other side.
Meanwhile, pop some organic frozen berries in a small saucepan on a low heat, stirring occasionally. Don’t let them burn, we just want to warm them.
Place the cooked pancakes on a plate and cover with the berries.
This is enough for 2 pancakes, which is plenty for me – they are surprisingly filling!
If you have more of a sweet tooth, add a little organic maple syrup to the berries while they heat.
This is definitely my favourite green smoothie to make at home. I like how the flavour of the banana balances out the green taste.
Simply pop a handful of baby spinach leaves, 1 banana (frozen if possible) and 1/4 cup coconut water into blender (I used a hand stab mixer). Blend and add coconut water as needed till you reach your desired consistency.
If you don’t like banana you could use any other fruit eg. pineapple, frozen berries or mango! Add ice to make it really refreshing.
Super simple but feels pretty gourmet to me! I have used Asian 5 Spice Mix but feel free to replace with any spice that suits your tastebuds.
Peel and slice the sweet potato, place it into a small pot of boiling water.
Cut the chicken breast into squares of similar sizes. Coat them in the spice of your choice. Thread the meat onto the skewers (soak the skewers in cold water first to stop them from burning). Cook the skewers either on the bbq, in a fry pan, grill or I used a Breville sandwich press! Cook until the meat is no longer pink inside.
Once the sweet potato is soft (prick with a fork), drain the water out. Use a hand mixer to blend the sweet potato and create a really creamy consistency. Alternatively use a potato masher.
I like to have a side of green veggies with this dish have a really balanced meal. Enjoy!
If you love banana smoothies then this is going to be right up your alley, this feels naughty but is actually oh so nice.
Freeze a couple of peeled bananas. Once frozen pop the bananas in a bowl and add a couple of shakes of cinnamon (add more if you like!) . Blend with a hand mixer or use a blender. It’s best to use the pulse function as you don’t want it to become too runny. Once it reaches the consistency you’re happy with, serve it in a bowl. Grate some dark chocolate over the top – I have used an 85% cocoa organic brand.
P.S. I was reaaallly running out of light to take this last photo so it didnt quite get time to set – it will look much more ice cream like if you leave it in the freezer a bit longer 😉
