Easy, Healthy Apple & Cinnamon Mini Muffins!

Recently I made a big change. I began a journey to living an additive, preservative and chemical free life. I started looking at my nutrition, and what was in the foods I consumed on a daily basis. I love food, I love cooking, even more so, I love eating! I also like to know what is in the food I am consuming.

 

I found it difficult to find recipes for natural and healthy treats that could satisfy but were also quick and easy. So I started writing my own. As a mum to a toddler, it is important that I don’t spend too much time in the kitchen. These muffins are perfect for a busy lifestyle and take no time at all. 10 minutes preparation with simple ingredients that can be easily found at your local supermarket. A perfect size for snacking, if you can stop at one. Full of flavour, free from ‘nasties’ and YUM!

Apple & Cinnamon Mini Muffins 

Makes 16

 

You Will Need: 

1 1/2 Cups Almond Meal

1 Large Juicy Green Apple (Red Apples work fine too!)

3 Eggs

3 Tbls Coconut Sugar

1 Tbls Organic Coconut Oil Melted

2 Tsp Cinnamon

1 Tsp Nutmeg

1 Tsp Baking Powder

1 Silicone Mini Muffin tray

 

Method: 

  • Preheat the oven to 150 degrees Celsius
  • In a large bowl, combine the Almond Meal, Coconut Sugar, Baking Powder, Cinnamon and Nutmeg
  • In a separate bowl, whisk the eggs and set aside
  • Cut your apple into quarters and remove the core. Using a standard size grater, grate the apple (including skin) and add into your dry mix. Fold the apple through, adding in the eggs and coconut oil until well combine
  • Spoon mixture into your Silicone mini muffin tray level with the top and place in oven
  • Cook for 30 minutes or until muffins are no longer soft to touch
  • Serve warm or let cool and refrigerate for later!

 

Silicone trays work the best. Alternatively, you can use a metal tray. Spray with coconut oil prior to use.

    I made these today for my 14month old. She LOVED them. As did Dad ☺️ thanks for sharing such a great recipe!
