Gluten Free Granola

Don’t make your food choices mindless. Eat with intention and attention. Food has a large affect on your mood and the way you feel. There is no doubt that when you eat well, you feel well. Take time to recognize how your body functions and reacts from the consumption of food, listen to it closely and make the choices that will benefit you.

 

Gluten Free Granola is definitely a feel good food. It will get those endorphins running through your body from the first crunch. A nutritional powerhouse of ingredients, loaded with protein, magnesium, fiber and omega 3 just to name a few. With coconut oil giving it a light flavor, and coconut sugar for a gentle sweetness.

 

It is not only gluten free, but nut free too, so a safe snack for nut free zones! Add it onto yoghurt, mix through morning oats, or just eat straight off the spoon. Consume with intention and attention, it will make you feel great!

Gluten Free Granola 

 

You Will Need:

1 Cup Cooked Quinoa

½ Cup Sunflower Seeds

½ Cup Pepitas

½ Cup Coconut Flakes

½ Cup Pitted Dates Diced

3 Tbsp Coconut Oil Melted

2 Tbsp Coconut Sugar

1 Tbsp Chia Seeds

 

Method:

  • Preheat oven to 200 degrees Celsius and line a large baking tray with baking paper
  • Spread the cooked Quinoa into an even layer over the baking tray
  • Bake for 10 minutes and remove from oven. Set aside
  • In a large mixing bowl, combine the Sunflower seeds, Pepitas, Coconut Flakes, Chia Seeds, and Coconut Sugar
  • Mix through the diced Dates and Quinoa
  • Pour over the melted Coconut Oil and fold through until all ingredients are coated
  • Place back onto the baking tray and spread into an even layer
  • Continue to bake for 15 minutes or until lightly toasted. Watch carefully as it can easily burn
  • Remove from oven and let cool
  • Once cool, store in a jar or airtight container for up to two weeks. Does not require refrigeration
