Peanut Butter Bars

As life evolves, I’m always looking to make small changes to better my health, and better my nutritional intake. There is no better feeling than when your body is functioning to the best of its ability! Healthy fats are essential for this, and peanut butter is great to way to include these healthy fats into your diet. It is an integral part of allowing your body to function well!

Life is all about balance, but when you can whip up a sweet treat in such little time such as these Peanut Butter Bars, it just seems logical to avoid a trip to the shop for a chocolate bar. There is just something so much more satisfying about making food yourself. The joy of eating it, and even sharing it with friends.

Like most of my creations, this recipe is very simple and easy, and will achieve a delicious result! You will only need a couple of mixing bowls and a fridge to set. If you’re a peanut butter fan, you are going to fall in love with these peanut butter bars, even if you’re not, I promise you will love them too. Just remember, its important to read your labels before choosing a peanut butter. Ensure that you select one that is purely peanuts, a great go to brand is Mayvers, sold in most major Australian supermarkets.

Peanut Butter Bars

 

For the base: 

¾ Cup Organic Dessicated Coconut

4 Tbls Smooth Peanut Butter

2 Tbls Coconut Oil Melted

1 Tbls Rice Malt Syrup

1 Tsp Pure Vanilla Extract

 

For the chocolate top: 

4 Tbls Coconut Oil Melted

3 Tbls Rice Malt Syrup

2 Tbls Raw Cacao Powder

 

 

Method: 

  • Line a narrow rectangular pan with baking paper. To achieve a ‘bar’ you will need to use something that is thin but also has depth
  • In a mixing bowl, place your coconut. Add in the melted Coconut Oil, Rice Malt Syrup and Vanilla Extract
  • Fold through the Peanut Butter, and continue to mix until everything is combine well
  • Spoon into your lined pan and press down, 1 – 2 cm thick is preferred.
  • Place in the fridge to begin to set
  • In a separate bowl, add in the cacao and melted coconut oil. Once combine, add the Rice Malt syrup and continue to stir until you form a thick sticky chocolate mixture
  • Remove your pan from the fridge and using a butter knife, spread your chocolate mixture evenly over the Peanut Butter layer. Its best to start with the corners and work around. To make this easier to spread, heat your knife under some hot water first
  • Place back into the fridge and let set for 3 hours. Alternatively, you can place in the freezer for 1 hour.
  • Once set, remove from the pan and slice into bars. To store – keep refrigerated in an airtight container for up to one week

 

Handy tip – Place your jar of coconut oil in a jug of hot water before use. This will soften it enough to scoop it out with ease

    This recipe is amazing! I will need to make double the mix next time haha
    I also used peanut cacao spread as I didn’t have any normal peanut butter and it turned out great. Which I’m happy about because the more chocolate taste for this chocoholic chic the better.
